Only read if you want an in-depth analysis of the food, service, and ambiance at Estela. Summary: Good ambiance. Don't go for a reservation after 10pm because the staff is checked out and you won't get a Michelin Star experience. Flavor pairings seemed basic compared to other Michelin one star restaurants. Ambiance: Great. Dark & candlelit. Just what I want on a night out. 5 stars to this category. Service: Apparently good service stops at 10pm because the staff couldn't have cared about us less. We were never checked in on, only visited to order and receive food. To be fair, we got a 10:15pm reservation. It may have been our fault for eating dinner so late. At a regular restaurant I would have dismissed this poor late-night service, but at a Michelin star my expectation is that the service should be excellent throughout the whole evening. Food: No Wow! factor. Having been to more than 20 Michelin star restaurants from around the world (yes even Mario is jealous about how many stars I've collected), this is the first one that hasn't served a dish that has wowed me. At every other Michelin star, there is always a dish that makes me think "Wow, I have never tried anything like that before, and I could eat that forever." This one didn't only fail to do that, but disappointed me with their basic flavor pairings. We ordered 5 dishes: the olives marinated in oil, the beef tartare, the arroz negro, the ricotta dumplings, and the wagyu steak. Out of these dishes, 3 were okay, and 2 were disappointing. Highlight: arroz negro. Reminded me of Spanish paella. Good if you like paella with a crunch. Lowlight: ricotta dumplings. Buy Sargento's mozarella string cheese at the local supermarket and put it in the microwave for 15 seconds for the same effect. The wagyu and olives were good. Good not great. What makes these dishes stand out from other wagyu and olive dishes? I am still asking myself that question because nothing about them was unique. The beef tartare. Could have infiltrated a grouping of bruschetta and gone unnoticed. The beef was cut very thick, and it was overpowered by the capers and chopped onion. This dish would have deserved the lowlight if the dumplings didn't taste like string cheese. The ricotta dumplings. The mushroom slice on top was a cool addition aesthetically, but it did not add to the taste of the dish. This dish reminded me of my 10-year-old self grabbing a handful of string cheeses from the fridge. Estela, if that is what you were going for, you aced it! If not, it may help to decrease the size of the balls of cheese and pair them with stronger flavors. Overall, 3/5 stars is appropriate. I wouldn't recommend this restaurant to a friend, but I would accompany my friends to Estela if they wanted to go as a social occassion. However, I would eat beforehand.
