Michelin......please provide Chef Duffy with his 3rd star......Ever is amazing!
This was one of the most enjoyable meals we have ever had, and every single detail was thought out and executed to perfection. The food is stellar, the presentation original and detailed. The service is top notch, formal but not overbearing, and the staff are friendly, knowledgeable and timely. The cocktails we had at After, prior to dinner, were amazing and the bar was stunning and the vibe was cool. I can find fault in absolutely nothing, and for my birthday I cannot imagine a better option in Chicago. I believe they deserve the 3rd star, as we went to Le Bernardin for New Year's eve and this is every bit as good. Thank you so much for a wonderful evening, I can honestly say this was a perfect night. Cheers.

We visited for our leap year anniversary as a couple and the menu was nothing far from perfection, the style and quality of food was some of the best I’ve eaten. The unity the staff have delivering food, wine and even the water. The service is exceptional and the maitre was excellent ensuring the evening went perfectly. It’s our first visit to Ever and I will travel from the UK to experience this culinary delight again 10/10 and 5*+

We ate here last night for Valentine’s Day. I cannot express enough how impressed I was with every single aspect of our experience. One of the best nights of our lives. The service was outstanding. It was like they choreographed their movements. Each person that came to our table was amazing. Not a single person was bad. The level of detail they took in providing service to us was outstanding. I wish I could remember our sommelier’s name because he was so pleasant and a wealth of information!! We shared the wine pairing because we don’t drink that much and it was more than enough for us. The champagne and a few of the wines were so good that I’m definitely going to buy them for myself!! The food was gorgeous and delicious. I’ve never eaten more flavorful food in my life. My boyfriend is a big guy and was concerned he’d leave still hungry. Nope. We were both stuffed. Pauline was our captain (the only employee with lines on The Bear). She was extraordinary. Truly a delight. It was definitely out of our comfort zone price-wise but the experience we had made it worth every penny. (It was about $1000 for the two of us with sharing the wine pairing) Ohhhh and ask for a kitchen tour!!! Wow!!! 10 out of 10!!! Thank you.

Booked this restaurant months and months ago and told them of my allergies then and today 2 days before out reservation was emailed and told they could not accommodate me. I was flying to Chicago for this and now am left scrambling to find a restaurant reservation. RUDE no matter how good your food is. I have eaten all over the world and have never been treated this way. It is ok to not be able to accommodate someone BUT tell them when they ask not last minute, thats the RUDE part. Needless to say I will never eat here nor will any of my friends.

My wife and I celebrated our 25th wedding anniversary at Ever, our third visit to this amazing place. Every visit outshines the last. We have dined at several Michelin Star restaurants over the years (Trotter’s, Alinea, French Laundry) and, in our view, Ever is on the top of our list. The focus is on the food (no theatrics) and it shows, from the minimalist/soothing décor to every detail of the food preparation and its presentation. I had the pleasure to enjoy their wine pairing and our sommelier, Curt, really knew his stuff. From the wine region to his knowledge of the flavor and fragrance chemical components of the wines (esters & ketones, etc.), it was fun to explore his expertise and he indulged us. My wife does not drink alcohol and, true to form, Ever offered a non-alcoholic wine pairing. Fabulous! Be sure to ask for a tour of the kitchen as, with the main dining area, it is a work of art and it is really something to see the artisans at work. As for parking, there is free parking on the street (if available), a validated covered lot very close by or valet parking as well. Ever is not inexpensive, but if you are interested in dining in one of the top restaurants in the country, Ever is the place to go. We can’t wait to return.

The fine dining Ever restaurant, enjoying a string of Michelin stars, is located on West Fulton in downtown Chicago. The food catalog compositions provide options to pick between vegetarian or meat and seafood filled tasting menus with 12-15 courses of delicacies that range from ctrhyo-frozen hamachi to sweet bay scallops. My favorite was a lamb dish with coffee, fennel and yarrow,,,,,,,,,and I fell for the sweet of sorbet over pineapple topped with black licorice. The design is provocative: leather seats, plush carpet, black ceilings, dark floors, warm rafts of wood and mood lighting add warmth to the environment. Next door is the 'After' cocktail lounge which is affiliated with the Ever crew. The Ever has great digs, great service and everlasting great food.

Everything one wants in a Michelin tasting menu. Food and services were amazing. This had to be the best restaurant experience i have ever had and I am not new to fine dining. The recognized my mother was a lefty and organized her setting as such. never felt rushed. service and food were perfect.

My wife and I took our son as he is rapidly becoming a foodie. this place is super. super expensive. and simply super. we have also eaten at Per Se in NYC. the food wasnt as breathtaking and the servers were not as knowledgeable, but it was still a great experience. its worthy of its high global ranking.

This was a perfect culinary adventure for me: from the very gracious greeting at the entrance to the stunning dining area to the attentive staff .... and, of course, the well-executed and delectable dishes (while the Ever-standard hamachi dish is not to be missed, I was equally impressed with the follow-on dish of white asparagus, cut into fine strips, and served with smoked trout) Special mention goes to Oscar, my primary server, and Brian, the sommelier. Both demonstrated great knowledge and, more importantly, tremendous enthusiasm for the food and wine. As a solo diner, I always look forward to engaging the staff with questions regarding dish preparation, why a particular wine was selected, etc. My interactions with them only added to an already superb evening. Ever Restaurant should be on everyone's list of aspirational places to dine...and to experience!

Two everlasting impressions of Ever, the glittering and glitzy restaurant that Michelin starred chef Curtis Duffy and his business partner Michael Muser opened in 2020 at 1340 West Fulton in the historic Fulton Market, in the West Loop neighborhood, a block east of Ogden: (1) it is the most elegant restaurant in Chicago since the Dining Room at the Ritz-Carlton closed and (2) it offers the finest tasting menu that my wife and I have experienced since three-Michelin star chef/owner Patrick O'Connell changed to a tasting menu at his world-class Inn at Little Washington in Virginia. Duffy, who earned his Michelin stars at Avenues and Grace in Chicago, offers eight to 10 courses from 5 to 10 Tuesday through Saturday. The trick is to select items of meat, seafood and vegetables from three menus and find time to consume them all while admiring the dining room's posh decor. Where did they get all this glass? And how did they put it all together? Truth be told, I wasn't a fan of tasting menus until O'Connell explained that he decided to make the switch because it gave him more opportunities to be creative in the kitchen. And when you let Michelin-starred chefs like O'Connell and Duffy loose in a kitchen, the result is many innovative and delicious items. So, on our first visit to Ever, we indulged in King crab, salmon, scallops, squab, butternut squash, maitake, miyazaki, hamaichi, tomato, peach, chocolate, melon, black truffle, parsnip, chartreuse, even caviar. A little of several items instead of a lot of only two or three items. And the fun of it all is to see how a world-class chef puts it all together.

Astonishing. If I had to leave a one-word review, that would be it. From the decor and staff to the food and wine pairings, EVER hit EVERy mark. We have been to Next (the opening Paris 1906 menu.) We have been to Alinea (February 2020.) We have been to Albert Adrià's Bodega 1900 (when we couldn't get into his brother's El Bulli.) We have had tasting menus that aren't Michelin-starred. We have eaten in Paris, NYC, London, Shanghai, Amsterdam, L.A...... And while every experience listed above is one forever notched in my mind's memories, it is the evening we experienced at EVER that tops them all. There is something to be said about every morsel's molecule that Chef Duffy has crafted for your tongue. There is something to be said about the white ash slats of wood and textured walls that balance out the gorgeously moody atmosphere. There is something to be said about the sommeliers' precise picks and pairings. There is something to be said about every aspect - the bathrooms and readings, the music spilling out of the (hidden) speakers, the perfect table spacing. But at it's core, at the very thud of this establishment's heart, the most to be said is about the staff. The people. For without the people - the woman who greets you by name at the door and escorts you to your specific spot, the head server's smile, welcoming and warmth, the sommelier's explanations of how the wine will play with the dish, the servers who bring and take away dishes with effortless grace - there would be no EVER. To play on words, and a cheeky young person's game, never have I ever experienced anything like EVER. It is unpretentious. It is delicious. It is fun. It is everything you'd ever want when making plans for an event (fair to call it that) of this caliber. And it is, by far, the best meal and evening I have ever had the privilege of experiencing. I don't want to go into the meal's details or the exquisite wine pairings. That's for you to discover on your own. But I do want to say thank you to every person at EVER who made our night one for the books. And I especially want to thank the staff for two surprises that left us in utter disbelief - your graciousness and gifts will not be forgotten. There are restaurants with three Michelin stars (and I highly believe EVER deserves that third,) and there are restaurants with no Michelin stars that still manage to blow your mind. And then there's EVER; a place that ticks all the boxes - even boxes that don't exist. Thank you, again, EVER.

Ever is hands down the best culinary experience in Chicago. I went for a birthday dinner and the tasting menu was superb. The Miyazaki A5 paired with the Domaine red wine was easily one of the best experiences I have had. To top off a great evening the sommelier arranged for me to have a complimentary bottle given to me as a gift. I was able to see the kitchen as well as a signed menu by the chef. Michelin please get it right and award Ever with it’s 3rd star!!

The meal and entire experience are almost perfection. This was my second visit at Ever and I continue to be so impressed and grateful for the experience. Not all top notch restraunts have the same vision, so people respond to them differently. For me, the vision for Ever and its flawless execution hit the spot. The food is interesting in concept but more importantly supremely delicious and beatiful. The wine pairings are consistly excellent and each elevates the dish. This is not always true even at the best restaurants! At $185, wine pairing is excellent and an excellent value. Its not hard to find more expensive and terrible wine pairings in Chicago. The service is elegant, responsive, not stuffy, and fun. This is not an easy balance to pull off. Overall, Ever is one of the best restarants in the world in my opinion, and I have eaten at a lot of 2 and 3 star joints all over. For me, its the best experience in Chicago hands down.

I’ve been to quite a few restaurants (including Michelin starred ones) and yet, upon reading the reviews, I was expecting something special from this one. I have to say, my dad and I were very disappointed. The dishes we liked best were the breads and butter that accompanied the meals (which were non ironically marketed as a special part of the meal). Other highlighted dishes were (1) pasta and (2) something that definitely tasted like a hamburger with fries, ketchup and (literally) mashed potatoes. Also, the dishes are undeniably beautiful — it’s only their flavour that is lacking. At least my dad and I were kept entertained throughout the meal by the underwhelming quality of each dish, so I honestly can’t say I had a bad night. However, I’d like to warn fellow travellers to Chicago before you spend 500 dollars on an underwhelming meal. If not, I sincerely hope you have a different experience! :)

Simply impeccable. The decor was haunting and the service perfect. But above all the food was exquisite. I won’t describe in detail the 10-course meal. Chef Curtis Moody works with flavor, texture, and temperature in a way I’ve not seen elsewhere. Comparable with the best restaurants I’ve visited anywhere. The wine pairing was original, with delicious and hard-to-find bottles. This restaurant richly deserves a third Michelin star. You’ll need a fat wallet, but in my opinion the experience is worth every penny.

Beyond sensational. Simply one of the best meals we have ever enjoyed. Anywhere. Ever. Each dish was not only beautifully presented, but the ingredients and flavours melded together seamlessly to create a truly memorable gastronomic experience. Service was exceptional. Attentive, but never intrusive. Only quirk? A wine list completely lacking anything from Bordeaux or Burgundy. Based on our experience this evening, a third Michelin star is not only thoroughly deserved - it won’t be long in coming. A huge thank you to the team for such an amazing experience.

Let's start on the positive side. This is one of the most beautiful physical dining environments I have ever encountered. Taking a page from Disney story telling, the entrance to the restaurant is carefully crafted to transition you from a Chicago street front into a culinary mecca - a home run. It is a very calming zen environment. But that is where it started to fall apart. The entrance used curved hallways to channel guests into the dining room. We happened to be seated next to the kitchen entrance to the guest space where the same design was used and the hard curved surface channeled every kitchen conversation and clang into our no longer zen space. I challenge the owners to enjoy the ambiance at our table. (Not that it matters, but we had reservations well in advance, speak softly, and were well dressed.). Their acoustician should be shot. The meal was a study in "teaching to the test". Far too much effort was invested in trying to check the boxes to achieve 3 Michelin stars (failed) than to actually provide a good guest experience. For example, I understand Michelin requires staff monitoring guest tables but service is supposed to be magical and unobtrusive; the dining rooms are surrounded by vultures. If I had to come up with one word to describe the meal it would be "soulless". The one saving grace was our sommelier who actually had some personality. He was a gracious host and not a robot. My husband had the wine pairing and was very pleased with his choices.

The service was exceptional. The food was not memorable. The courses were mostly comprised of custard or gelatin type broths. They used a lot of sugar in the courses, and too much salt. Very little actual substance to the courses. The wine pairing was very scarce but sadly low end wine being poured. Not the value that was anticipated for the price point. Unfortunately the management were mask/vaccine nazi's as well. They scrutinized my husbands vaccine card to make sure it matched his DL. Our table was literally two steps away from the bathroom and they made us wear masks too and from the bathroom. Not good for business.

This review is a bit delayed, but better late than never.
Ever not only fulfilled all expectations, it went above and beyond.
First, and foremost, we were there to celebrate my birthday and it was well worth it. Having seen a lot of the fine dinning experiences in Chicago start to dwindle, Ever has revived the experience.
Service is impeccable, the food even more.
We did add a wine pairing.
If you are looking for an exceptional foodie experience and you appreciate the culinary process, this is a must.
At the end of the dinner, we got to see the kitchen, and also met Chef Richie Farina whom I had met years ago back at Moto. Overall, simply excellent.
Three Stars a 'coming
As a fan of Grace, I had high hopes for Ever. Lets just say my hopes were realized. Each dish and paired wine were flawless. Although each dish was spectacular, the arc of the meal really elevated the experience. I was actually in tears after my first bite of the last savor course. The flavors and progression are very classic. The use of smoke and heat are jazz notes. The only 2 star places I've been at this level (Manresa, Atelier Crenn) were promoted to 3 stars shortly thereafter. One of the best meals Ever!

...in my opinion Ever doesn't quite reach the bar set by Grace, Curtis Duffy's previous restaurant (Grace met an unexpected and unfortunate end, you can easily find the gruesome details on the internet). He had the bad luck to first open Ever in July 2020, in the midst of the pandemic. When you've spent $5 million dollars (reportedly) to build out the restaurant you really have no choice but to open.
Ambience: A beautiful dining area, with curving walls and well-spaced tables; contemporary lighting is featured over each table. After dinner, we were offered a tour of the kitchen, private dining room, etc. As our seating was at 8pm, unfortunately we did not have an opportunity to see the kitchen in action or meet Chef Duffy.
I'd read about this beforehand, so if you want to be surprised when you go to the washroom, don't read the next few sentences. Grace had been known for its 4 bathrooms, each one based on a season (summer, winter, fall, and spring)...Ever doesn't go that route but the bathroom has a different soundtrack than the dining area...Matthew McConaughey reading his memoir "Greenlights."
Food: We visited in Sep 2021. The menu was 11 courses; 4 of the "main" courses featured a bread side (with a dish of black salted butter and herb-infused butter as well). A couple rounds of extra sweets ended it, so call it 14 courses. Ever has hints of so-called "molecular gastronomy," where the food is presented in surprising and new ways, but in general it plays it down the middle. You recognize each dish for its main ingredient.
Rather than list each dish, as the menu I think changes slightly day to day (and certainly seasonally), I will just describe it overall (with a couple of thoughts on specific courses). Ever's menu followed the tried-and-true degustation menu standard of beginning with cold / room temperature dishes, moving from vegetable based to fish, then hot items also moving from fish to meat. A palate cleanser of some type marks the end of the savory courses and the beginning of the sweets.
A scallop course was presented in a small glass jar with a foil top (like a yogurt cup or applesauce cup) - when you peeled back the foil, smoke was released from the jar...a few dabs of pureed red bell pepper were also on the inner foil, which you licked off. An amusing start.
The King Crab dish has become I think a signature dish, it is served in a small bowl with a cucumber "soup." The unique aspect of the dish is that it arrives with dots of trout roe and some other items (can't recall what) that are placed on top of a "shelf" made of something (again can't remember what)...so you break the shelf to dump everything into the soup.
Ora king salmon (farmed in New Zealand) was delicious. Miyazaki (Wagyu beef) naturally ended the savory course and was incredible. Puffed beef tendons were an accompaniment to this course, beefy flavor but pretty sticky...and something completely different.
Oh, and our parting gift were two small bottles of house-brewed kombucha.
We also did the wine pairing as well, which featured 9 pours. The wines leaned heavily towards Europe - the only exceptions were a Sauvignon Blanc from Willamette Valley (a surprise as that area is best known for Pinot Noir) and a Pinot Noir from the Otago region of New Zealand. Not a bad glass in the bunch of course; a Chenin Blanc Vouvray was a standout, as was the New Zealand Pinot Noir.
Service: Excellent service as expected. They adapted to our eating pace without missing a beat. I know this, as another table for two was seated about 10-15 minutes after us, but completed their meal before us (although we did order a cappuccino and they did not). An understandable explanation of each dish was given, as you find at all fine dining places. Kind of a funny standard, I think unless you are a home chef or in the culinary industry, it is in one ear, out the other.
Overall a wonderful meal, with excellent service and no complaints. The menu is $285, the wine pairing is $185, the cappuccino is $8, and a 20% gratuity is included. So for two, with tax, you are looking at over $1,200 for dinner (you are charged $100 deposit when making your reservations on Tock). Honestly the cost of the night is a factor in calling it "very good" and not "outstanding." I do appreciate the hard work of the servers, chefs, waitstaff, etc, and understand the restaurant business is beyond brutal...but still...that's a whole lot of money. I've very glad we finally made it (we had a reservation for Nov 2020 but COVID closed them down).

This is a very high end, small plates, prix fixe menu that is for foodies only. All that you would expect in presentation, service, uniqueness, and ambiance.

It’s Curtis Duffy, so of course it’s good. The spacious dining room is understated, with nice high ceilings, pleasant lighting, generous spacing between tables, and (much appreciated) comfortable leather chairs. Too bad the bathrooms don’t hold a candle to the 4 season works of art that Grace featured (these are monochromatic with a piped-in voiceover that sounds like Matthew McConaughey reading a script). The $285 per person tasting menu is uneven; the presentation is beautiful, though less spectacular than Grace's. The amount is perfect; small-to-medium portions supplemented with specialty breads. Wine pairings add quite a cost.
Scallop had a hint of fishiness, king crab a touch tough, peaches unripe, donut bland. Stand-outs were the salmon, beef, tomato/cherry/manchego dish & divine cream cheese ice cream (a jar of strawberry dust would have been a topnotch parting gift).
A 20% service charge may be understandable in the Covid era, but a forced additional cost never feels hospitable; the service was a little stiff (formulaic politeness instead of genuine graciousness from our server), the exception was the personable and knowledgeable sommelier.
