Graphite is great
Graphite is a great restaurant. The food and drinks are spectacular. The dishes are beautiful. The team is top notch and exceed high expectations.

Delicious meal. Enjoyed the 15 course tasting menu. Really liked the oysters, beef, crushed langoustine, hamachi, tempura shisho, mushrooms, cod, lobster and deer calf. Fantastic restaurant!

Amazing restaurant. Finely curated dishes and impeccable timing on service. Went to another Michelin star restaurant the night before and we were so disappointed in the service and long waits between dishes. Not the case with Graphite. Beautiful and unique food, great wine recommendations from the Sommelier, and 12 courses handled with precise timing between each course. Sexy, private atmosphere. Fine dining at its best.

Overrated - went with my family of five and were seated behind a service station. Not next to or near a station, but behind the station. LED lights, back of a Chef, next to the water service and after dinner drinks for the full restaurant. This was not a speakeasy vibe, but a joke. I asked when seated and the chef said the stations were all over the restaurant and tables were all like this. They were not all like this. It would have been better to sit in the entrance hallway. When mentioning it again at the end of the meal they said this is where they put the larger groups that typically get loud and it is out of the way. We were a family with adult children. To many good options in Amsterdam to risk going to this place and not getting one of the only 4 good tables in the restaurant. Did tip because the staff and service was good.

Don’t let the other reviews detract you from this amazing restaurant! A very ominous looking building on the exterior with a QR code reader to get in. Once inside, you’re greeted by Jake and other members of the Graphite team. Jake explains how dinner will go and also informs you of a few rules; mainly, no interior pictures to keep the mystique of the restaurant. After handing over your coats, you are escorted to your table. A very spacious yet intimate interior - you can see tables in the distance but can’t hear other conversations. Dimly lit, but just enough light above your table to gawk at the expertly crafted dishes presented in-front of you. Each table was perfectly set prior to our arrival with amazing cutlery, flatware and dishes. The half circled couch was extremely comfortable and allowed you to sit close yet both have an advantageous view of the preparation stations around you. Jake was our main waiter and the sommelier. We started with a cocktail then a bottle of wine. The second bottle we asked Jake for some recommendations and he did not disappoint, spot on recommendations for what we were looking for. Lastly, Jake asked if we wanted a wine with dessert - we politely declined and said that’s not something our palate likes. Jake asked if he could bring out something for us to try… I quickly redacted my statement from before; we fell in love with this wine (2017 chateau guiraud sauternes). Thank you Jake for sharing your incredible knowledge on wines! The food, out of this world. Each bite had so many flavors, textures and smells. Not only could you see your dish during preparation at the stations but you also got a very small and quick final assembly for each dish upon delivery at your table. The staff informed you of the dish as they were finalizing it; adding an oil, a vinaigrette, etc. We elected for the 12 course menu and were perfectly content with the portions; if not a little overstuffed. Every staff member was attentive, very friendly and knowledgeable about the food and/or the wine. Smiles and wonderful conversations were plentiful throughout our time there. In total I believe we had roughly 7-8 different staff members converse with us - food, drinks, normal conversation, etc. Highly recommend, go see for yourself - you will not be disappointed.

This was a surprise visit for my 30th birthday my girlfriend and I had the 15 course taster menu and each dish was excellent. The service was very attentive with the chefs who built each dish coming over to give the explanation. The setting is very intimate and comfortable. Special mentions for the steak tartare, henne egg (shout-out to Chivenchio!) sweetbread, and lobster dishes which were all 10/10.

We stayed for a week in Amsterdam to celebrate our 10 year wedding anniversary. We stayed at the Eden Hotel. I noticed that Graphite was to the side of the hotel and wanted somewhere special to celebrate the evening. Couldn't of chosen a better spot. From the moment we arrived we had an amazing experience from the decor to the food and service. Everything was top quality. I can't recommend graphite enough if your looking for a special evening in Amsterdam.

On the day of the reservation, we received a QR code with which we could open the restaurant door. On the outside, you see nothing at all of the restaurant. Upon entering the restaurant, we were asked not to take pictures of the interior in order to create a similar experience for everyone. Respect for the way they brought this, and I will therefore not describe anything of the interior; you have to experience it yourself. In this restaurant, everything is right, besides the experience, they have great people in the service, and the whole evening flows like a smooth wave. One dish is even more beautiful than the other, and every now and then, one of the chefs comes out of the kitchen to explain their dish. This restaurant is worth the Michelin star they have, but with this creativity, flavors, finesse, and experience, a 2nd would not be out of place.

Honestly, I was a bit nervous booking here for a special celebration because of the lack advertisement regarding the location and ambiance of the restaurant. It is done on purpose by the restaurant. I promise to anyone that feels the same, you will NOT be disappointed. It is a wonderful atmosphere where care is taken to make you feel comfortable and enjoy the meal to its outmost. The staff was very friendly and solicitous. We chose the 15 preparations and one of our party is vegan and another has many allergies (including gluten). They took extra care for both with fantastic substitutions to cover our needs (extra bonus was the gluten free bread - simply out of this world!). It was an amazing experience, worth the expense and would definitely repeat it!!! The chef and team more than deserve the Michelin star!!

From QR code entrance to warm and welcomed goodbye, this restaurant truly exemplifies what anyone wanting a true culinary experience would ever hope for. Graphite, led by the soft spoken yet clearly driven chef/owner Peter Gast is so carefully procured. Upon entrance, guests are asked not to take photos (kudos, as we are all so consumed with taking photos that we merely don't relish in the experience) are welcomed into a warm, sexy and well appointed bar where Max, a lively, young and clearly energetic and knowledgeable sommelier greets you with a beautiful Blanc du Blanc (as is our case) which sets the tone for the evening. When seated in your own private enclave within the main seating area, each area with its own dedicated cold and prep station (note: high attention to each of its guests as any starred restaurant should have) Max comes along to explain the first (as he does for every wine pairing which he hit on the nail whilst taking such risks) with such enthusiasm that is clear he has a profound love for his craft. The first course, a garden full of bursting flavours...a cantelope ravioli surrounded by citrus and Dutch herbs is the opener. Every course thereafter, an explosion of flavours. The cod, created together by Peter and sous chef Joris Rijnenberg, a symphony in itself. The beef tartar topped with a crisp that mirrors the Venetian masks, so delicately created with just enough spices to compliment the tartare. The Dutch procured lamb with seasonal white asparagus and pea...each and every component perfectly balanced to create a symphony of its own.Dutch cheeses plated in the exact order in which they should be placed, served from an elegant cart with a choice of handmade apricot and pomegranate jams. All explained with such passion and detail. I could go on and on about this magical experience. This meal is to be compared with Puccini's Madam Butterfly. Drama. Story. Passion. Melody. The service fluid and composed. Just enough attention yet not intrusive. A team that clearly has passion for what they do and who is proud to work along side a great maestro such as their head chef. It is so rare to find a restaurant that has a clear understanding of a culinary experience in linear lines. A true culinary experience, a notable chef who honestly executes just what he loves to do. Bravo.

We booked the 20 course tasting menu experience. The restaurant reached out to us to make sure we didn’t have special dietary restrictions in advance. The speakeasy atmosphere was cool and easy going, relaxing and added positive vibes to the overall experience. Staff was accommodating and helpful. The pace of service was perfect. We were there 3.5 hours for the 20 courses. The wine selection was fantastic...we had 2 bottles and enjoyed both. There was not a bad course all evening...some of the best bites we’ve had. We were very full, but not overly stuffed when we left. No dress code, but recommend smart casual. Wonderful overall. We would go back!

Some ups, some downs, overall average and a bit tiring... There is nothing very wrong with Graphite but nothing really stunning either! What is missing is a story telling and a bit more generosity!
