Perhaps it was the anticipation, perhaps it was my hopes and dreams of the concept.. but unfortunately after a major detour into the city to try Hatch, I was disappointed.
We ordered 5 total skewers: tuna belly, beef tongue, chicken breast with plum, chicken gizzards, the special: oyster mushroom. The tuna belly was clearly not belly (maybe just tuna); the beef tongue didn't quite taste or have the texture of beef tongue, as it was cut in a cube which seems unlike how usual tongue is prepared; the chicken breast with plum was good, as the plum was strong but didn't over power the chicken; chicken gizzard was good, with that perfect crunch and bouncy texture; and the oyster mushroom special was not cut in a bite size manner (they didn't serve it skewered) making it a mess to eat or share since it was hard to bite through, and also didn't have much flavor.
I noticed the chef cooking had some flare ups, which I believe should not happen as often as they did for yakitori?
The decor is simple but interesting, and the service for us was fine... it was just not worth the price nor our effort for just so-so food.
