While I was in Italy, I had the pleasure to visit multiple Michelin Star restaurants in the course of 2 weeks. Il Convivio Troiani was my favorite Michelin Star restaurant for dinner. Reserving my seat at the restaurant was easy. Also, the interior design and the room temperature was great. Waiters seem to be catering to the customers well. Let's get on to the food. I just want to know note that I went into with an open mind with no expectations. I had the multiple set course meal, but I opted out from the wine pairing, rather I chose the wine I wanted to drink. I just didn't want to be told that's the only wine I could drink for each meal, and I knew generally what I needed to go well with the food I was getting. Luckily, the menu provided me with what I was going to get in the set course menu, rather than getting the "surprise, this is what you're going to eat right now."Pasta was a little dry for me, but Chef Troiani's interpretation of seafood pasta was a seafood flakes or powder infused with olive oil and other ingredients. When I read seafood, I was expecting something more bulky, but it was in a powder form. I feel this is what gave me the impression that it was little dry. Similar to another Michelin Star restaurant I went to earlier in the week, Chef Troiani had 4 bite size samples on a small log. I enjoyed this quietly, and the small pieces had so much flavor and multiple angles of profile going at once. I had the combinations of sweet, fruity, salty, savory, etc. from different ingredients such as pork, truffle, apple, radish, pasta, etc. Red prawn dish was balanced well with the peach and coconut. Raw red mullet was good and a little bit of Japanese influence to it. The greens were fresh, and the crispy skin provided balance of texture for the raw fish. Another interesting dish was the concord grapes with corn salad. Cinta sense pig was basically a crsipy pork belly with mustard and fig. It was great and just what I was looking for after all the small bites. However, I believe the highlight of the entire set was the dessert. Specifically, the green tea sorbet with peach, cannoli, chocolate, candied leaf, and gold flakes. This was by far my favorite dessert. There were other dishes that came with the set course meal, but I don't feel like typing all of it cause it's too much. Overall for two people, we spent about 400 Euro.
