Superlative!
Grandeur and Frisian down-to-earthness go hand in hand. Being majestic, grand, beautiful, dignified and impressive, it is executed to perfection in an awe-inspiring way at a very high culinary level. That completely relates to the fantastic cooking of this Chef. A personality that appears relaxed and factual under all circumstances we have seen. Being thoughtful and radiating tranquility are striking for him. This Chef has an eye for reality, his company, his guests, his employees and his wife. And you can tell that he is full of ideas and plans that he can bring back to reality. I also review for myself to describe all the interesting addresses we have been to. So that you can read it again later. But this time it's really fun because we have now been to the culinary paradise of the superlative. In any case, if we compare this gastronomic palace with star restaurants in France, Italy, Spain and the Netherlands. The fact that the Michelin stars have lagged behind in Switzerland does not change this. It's just a matter of time before they fly back in at Inter Scaldes restaurant with the new owners. In addition to excellent cooking, hospitality is the magic word here. Normal you would say. But executed to perfection at Inter Scaldes. Everything is an experience, from the reception at the parking lot, the reception of the booking check in the hotel, the suitcases are taken to your hotel room, the reception at the door of the hotel, the hotel bar, the kitchen, being taken to your table and consuming all the delicacies that pass by at the table this evening. And then I haven't even mentioned the last course at the bar. I'm sure I've forgotten something too. And breakfast the next morning was also a treat. It's all essential to fully live a gastronomic experience. You feel comfortable with this, there is a dialogue with everyone in which each other is listened to carefully. The service orientation is extremely high, a lot of attention is paid to the guests, all employees are very sympathetic and empathetic. PURE! Then the gastronomic experience. Pure and very refined flavors that are elevated to art and given shape by the hands of the Chef and certainly also by the hands of his Brigade in the modern and well-organized kitchen. The end result on the plates is eye-catching and every bite in the mouth is a true taste sensation. Of course we opted for the 7 course dinner + extra dishes with matching wine arrangement. For the anals, in addition to the delicious amuses, below Le Menu from Saturday April 27, 2024: Shellfish green curry | jasmine rice | seaweed Unforced duck liver beetroot | sunflower seed Imperial Heritage Caviar (R) “Beluga Royale” | North Sea crab | celeriac Imperial Heritage Caviar (H) “Oscietra Limited Edition” | green pea | broad beans Langoustine kohlrabi | apple | tarragon Sea bass asparagus | wild garlic | buckwheat Lamb sea buckthorn berry | string bean | Zeeland oyster Van Tricht “on stage” selection of cheeses | matching garnishes Fryske Sûkerbôle cinnamon | Grevenbroecker | banana | Chili Sushi rice Whiskey | pineapple | salted lemon The wines: Estano Originale 2022: Cataratto | Sicily | Italy Jean Sipp 2021: Gewurztraminer | Alsace | France Nicolas Maillart: Pinot noir | Premier Cru | Champagne Wagner 2020: Grauburgunder Von Loss | Baths | Germany Almenkerk 2021: Chardonnay | Elgin | South Africa Johanneshof Reinisch 2022: Pinot noir | Thermenregion | Austria Parce Freres 2003 (R) Grenache | Rivesaltes | France Vuurzee 2023 (H): Beer | Champagne yeast | The Netherlands Chateau Simon 2019: Sauternes | Barsac | France Fülöp 2019: Furmint - Harslevelu | Tokaj | Hungary Then the compliments to the ambassadors in the hotel and the service. All kindness. And professionalism. If you ever want to work in another industry and live in the north, then by all means apply to us. You are all accepted! Hospitality is in your genes. You are relaxed, sociable and greet your guests with a smile. But above all, you can see that you enjoy your work. And with each other! This experience in Zeeland was very special for us. Dine, sleep and a delicious breakfast. It's a bit of a drive from Bolsward but we'd love to come back! Oant shen.
Be the first to ReplyIt was fantastic! Worthy successors of the Brevet family.
Yesterday for the first time, after the takeover by Sanne and Jeroen Achtien, we drove to Kruiningen again to have lunch in the truly beautifully renovated Inter-Scaldes, which has been our favorite restaurant for special occasions for years. A warm reunion in the parking lot with Tessa who proudly showed us part of the beautiful renovated business. After we greeted our friends in the lounge, a parade of beautiful appetizers followed: a mini cheese toastie, a crispy filled with Simmenthaler tartare and a beautiful ceramic with a fragile squid creation. Everything delicious! Nice to meet the charming Sanne Achtien. After drinking our delicious glass of champagne, we were invited to meet chef Jeroen Achtien in the kitchen and two chefs prepared four beautiful appetizers on the spot, including candied onion and red potato. I don't remember all the ingredients, but it was delicious! Then we entered the 'temple'. How beautiful! How beautiful this restaurant has become after the renovation: chic, contemporary, spacious, even more privacy for guests and one with the beautiful garden that has largely been redesigned. Nature is, as it were, brought inside. We got a nice table with a view of the garden. Everything neat: no unnecessary frills on the table that was covered with some kind of table cover. Very sleek and attractive so that all attention is focused on the dishes. We found the service by Tessa and the young team fantastic. Everything wonderfully informal, very correct and with humor. We opted for the five-course menu consisting of a beautiful scallop dish with oyster and black truffle. Also included is a delicious Saint-Bris 2022 from Gautheron. This was followed by a 'paste' of unforced duck liver with divine beetroot ice cream. Then dry aged sea bass with various preparations of asparagus, buckwheat and wild garlic. As a condiment before the main course, a beautiful scoop of basil ice cream with caviar, followed by an amuse with a beautifully cooked piece of meat. Then they served a beautiful glass plate with a perfect piece of Zeeland lamb covered with an oyster and surrounded by string beans and sea buckthorn berries. Very nice! Still, let's bring in the cheese trolley for Van Tricht's cheeses 'on stage' where the cheeses slowly rise from the cooled cheese cart. All delicious. Then the dessert with sushi rice, citrus, pineapple, mango and salted lemon. Afterwards you have the choice of having coffee, tea and friandises in the salon or at the table. We asked for a regular cup of coffee, but that was an espresso with a jug of hot water because they cannot make regular coffee. This might be an area for improvement. In short: eat here, enjoy the beautiful ambiance, the excellent and prompt service, the innovative cuisine and the extensive wine list full of wine treasures. We think that Sanne and Jeroen Achtien and their team have delivered a wonderful performance and wish them much success in the future. I think that Jannis and Claudia Brevet have found worthy successors to pass on the culinary 'torch'.
Be the first to ReplyBeautifully renovated place with pleasant atmosphere and delicious food
A beautifully renovated place where it is pleasant to sit. The 7 course menu was highly recommended, each course beautiful to look at and very tasty. The accompanying matched wines are also highly recommended. An extra mention for the smooth service and explanation of the dishes and wines by the entire (mainly young) staff. The chef also takes plenty of time to chat with his customers during the tasting of a dish in the kitchen, which is certainly a plus.
Be the first to ReplyA sublime experience with an inventive chef with an exceptional team
A unique experience with a new one Inventive chef who, with his exceptional team, takes Interscaldes to the next level. We enjoyed the personal welcome, the exceptional dishes and the perfect wine pairing from Tessa We had something special to celebrate and that was taken into account in detail. Definitely worthy of a three star rating
Be the first to ReplyBeautiful Symphony of Knowledge, Skill, Hospitality and Taste
Upon entering the refined Inter Scaldes, located in Kruiningen in Zeeland, you are embraced by an atmosphere of class and warmth. The soft light and the subtle background music (remarkably well chosen) create a harmonious whole that caresses the senses, while the acoustics of the room invite you to relax and enjoy. The expertise of the kitchen brigade is evident in the preparation of technically challenging dishes such as brook knight and langoustine, where extreme precision is essential for culinary success. The dishes are not only a feast for the eyes, but also a symphony of flavors that are perfectly balanced. The young sommelier, whose knowledge and presentation can be considered cutting-edge, will guide you through a wine experience that will elevate the evening. The Clos Mont Blanc is an absolute highlight that is characterized by a rich complexity. A special mention deserves the caviar, a treasure from Iranian waters, coming from sturgeons that have been given more than twenty years to form this delicacy. It is an expression of pure luxury, carefully served on a fresh plate with crab and, where necessary, acids and oils to honor the unique and refined flavors. Although the portions are generally well-measured, the amount of duck liver was almost overwhelming, a small mark on an otherwise perfect experience. The evening ends in the lounge, where a buffet of desert appetizers heralds the finale of an impeccable culinary experience. The Inter Scaldes team has created an ambiance that exudes coziness, class and a warm welcome, ensuring an experience that will remain in both the memory and the heart for a long time to come.
Be the first to ReplyVaut le voyage!
Inter Scaldes has received a worthy successor to the Brevet couple. In a beautiful new interior, both the kitchen and the service deliver a top performance. We had no criticism of any of the courses. The wines were well chosen by the excellent female sommelier. Well, it costs a lot of money, but then you also have something worth saving.

Really enjoyed it. Wonderful and relaxing. To be repeated. Jeroen and Sanne and their team can be very proud of this!
Be the first to ReplyVery rich food - absolutely the best in the Netherlands, very nice people, a complete tour of the kitchen and you feel at home!!!
What a magical experience this was! We went there by helicopter and tasted the tastiest dishes ever
Be the first to ReplyFrench food
In a beautifully situated country house, which has been completely renovated on the inside. The welcome and service are top notch. The food is very well served, but a bit overdone. Also frieandise, is OK, but to be served by 3 - 4 staff......
Be the first to ReplyElegance and luxurious
Visited this beautiful restaurant for the third time (2008, 2013, 2023) before the chef and partner hand over this place to new owners later this year. Loved all three experiences although this time it felt well balanced and more refined and less over the top. Don’t get me wrong, the ingredients are still opulent with a lot of seafood and shellfish. Loved all the dishes really, very elegant, tasty, and balanced. The amuse bouche of beet, pineapple and roses stood out really, deep original flavours and simply divine. Beetroot is very popular these days but this was something different and out of this world. The caviar signature with Holstein beef, caviar and langoustines was a stellar dish although I am wondering if you can go wrong with these ingredients. The souffle for me was the least dish. Maybe I am not a souffle person or the flavours were too subtle/diluted. Special thanks to the sommelier who was very kind and chatty. The wine, a Savienneres was one of the best bottles ever and she was not shy to write down some wine tips. Thanks for the lovely experience and all the best with the final months!
Be the first to ReplyBest restaurant in Netherlands, period.
INTER-SCALDES, Zeeland, March 2023 It’s the most recent 3* of the Netherlands and having had both recently, I can safely say that it’s the best ! It’s been over 20 years that this lovely couple owns and directs this restaurant who was awarded its third stay in 2018. But this is the last year where this will go on as they will sell it to a new chef in July. So you have only a few more months, weeks, to go and discover the very precise cuisine of Jannis Brevet and the great choices and pairings of sommelière Tessa Van de Wouw ! The whole meal was a delight. Precision, taste, perfect cookings and great associations, plus a very clever pairing of the wines. The rooms of the “Manoir” next door and also of very high quality. I recommend this place greatly so HURRY ! 🌟🌟🌟
Be the first to ReplyWorth a special trip
Fantastic establishment with food to die for, little but secluded though worth a trip. Three stars well deserved.
Be the first to ReplyExcellent location and service for a special occasion dinner. Highly recommend it and for the next special occasion I w
I took my husband to this restaurant for a milestone birthday celebration. We opted for the 8 course meal package with wine and I asked them to organise a little surprise for his birthday. On arrival you are greeted as you park and check in is "verbally" done as you walk to your room. There was a welcome package of tea and banana bread. A very spacious room, clean and decent bathroom with shortage shower and bath. Lovely little garden. Only minus would be the incredibly creaky stairs. At dinner we are seated and treated to an 8 course meal with wine pairing. The menu is available online and they have alternative dishes available if there are any dietary restrictions (handy for me). At the time of writing the review I can't remember the courses (and I'm also not a fan of taking pictures). However I do remember that I enjoyed most of the courses and the service was very attentive and intuitive (like when I stood up to go to the ladies and someone was already present to guide me). For my husband they provided a decadent chocolate cake that we carried home (as we were too full to even finish our tea/ coffee with accompaniments). Breakfast the next day was in a smaller room. An upgraded version of a typical Dutch breakfast and enjoyed all the pieces.
Be the first to ReplyGreat overall experience
With 3 stars and 19.5 for GM, one can expect perfection. Although the overall experience was great (staying overnight in a wonderful room, etc), this was not perfection. We have eaten better food elsewhere (more adventurous, more creative, more 'waaw'), and some minor flaws do come into play (several wines on the wine list not available, some mishaps in service). All in all a great place, but for the amount charged that should nto be a surprise.
Be the first to ReplyFantastic food. Exceptional
