I love a lot of things about Kinn - the warm staff, engaging chefs, classy but cozy ambiance. As a lover of Korean food I really want this restaurant to succeed, but I feel that they still have a little bit of work before the food is truly 5 stars.There were some awesome highlights, like the truffle taco starter on a beautiful super-thin crispy taco shell, and the gorgeous crispy octopus which was full of flavor and perfectly tender with a light breading to contrast. Each dish on the set menu offered unique flavors and plating that really showed impressive creative expression and innovation.I did feel like they missed the mark on a few dishes, and generally missed out on bringing punchier flavors and contrast in the way you would expect Korean food (perhaps my expectations were wrong here). For example, the Mackerel dish (which I believe they said was their signature) had some really amazing subtle flavors going with the dandelion and perfectly cooked fish -- however I couldn't help but crave more saltiness to bring out the fish flavor. There was one tiny pickle to add saltiness and I remember wishing I had 3-4 more.Another case was the spinach ssambap, which again suffered from lack of punchier seasoning or salt to enhance the rest of the flavors -- which would've been fine if the kimchi radish were saltier. Unfortunately the kimchi radish was all pepper and no salt, which felt very unsatisfying.In the end, I still am happy to give the overall 5 stars as Kinn is a place I want to support and see grow, but I think there still needs to be refinement of several dishes and better balancing of flavors and seasoning. I'm confident they'll improve and am excited to come back in a few months to try the set again!
