Not Sure What All the Fuss is About
So...we were informed that this was one of the best restaurants in Vail...but I wouldn't agree. We were seating all the way in the back, service was ok, the sushi was just ok (and small for the prices). However, the temporal udon soup was on-spot as was the salmon. Not sure I would return except for the udon soup...

Amazing again! Had dinner at the bar with Elena as our bar tender and it was a real treat! We love dining here and sitting at the bar takes it to another level especially when you have someone like Elena guide you. We loved her suggestions and the conversation was really fun. We had the Matsuhisha salad, the yellow tail with jalepeno, the off menu blue fin tuna, the salmon main course with cauliflower jalepeno. And of course, a couple of The Gardeners! We loved every minute, the food is always exceptional and the Gardener - heavenly! Thank you, Elena. We’ll be back!

We had an excellent dining experience. I brought my friend here for his birthday. We had the oyster shooter and black cod appetizers, chilean sea bass with truffles and sashimi plate for our entrees, and the molten chocolate dessert. We also had a side of hamachi sashimi. We paired each course with different Nobu sakes. Everything we ate was creatively prepared and presented and was very fresh. Our server was very knowledgeable and helpful when we asked for recommendations since it was our first visit. We visited in the fall when the leaves were changing. The restaurant has floor to ceiling windows with a spectacular view of Vail mountain, so we had a great view of the changing leaves. My friend said this was one of the best dining experiences he has ever had.

Just had another amazing dinner at my favorite Vail restaurant. We sat by the bar as walk-ins and it was perfect. The ambience, the view, Stefan our bartender/waiter and of course, the food was outstanding. I especially loved the spinach salad with shrimp, a meal unto itself and so fresh and flavorful. The mushroom salad, shishito peppers and yellowtail and jalapeño were first rate. And the classic Gardener, which is an all round favorite, we saw dozens made, was delicious. We try to switch it up and try new things each time and are always pleased. No surprise that it’s packed every time.

We had takeout for dinner and the sushi was solid but not exceptionally fresh. Prices were on the high side also. It's a fine place to eat but not top of the line.

This is hands down the best sushi we have had anywhere. Sit at the sushi bar and have the chefs make you something off menu. It will be expensive and on season and delicious. We went once in June and once in October so the fish selection was different but SO tasty. A MUST do.

How can you go wrong at the sister restaurant to the world renowned Nobu? You really can’t and our work party of 12 quickly discovered the excellence in a dazzling array of small plates that included shishito peppers, edamame, tempura, lamb lollipops and of course, amazing sushi and sashimi. Sharable Japanese beers were served in traditional fashion along with outstanding drinks and high caliber wines. The team service model leaves nothing unattended to and the location in Vail village is conveniently located an easy walk from the transportation center. Yes, it is an expensive night out but highly worth the experience.

What an amazing meal. We came to celebrate my parents 49th wedding anniversary and the staff, food, drinks and ambiance were outstanding. My sister coordinated with Max (one of the managers) and Matsuhisa Vail took care of everything. From a customized printed menu to a large circular table overlooking Vail mountain to accommodating our party of 10 (with two kids under 4) and fantastic waiter Nathan (and many others who helped bring/bus food and drinks) this was what a nice meal is meant to be. We had so much good food. We stated with edamame and Shishito peppers. The peppers came with a delicious dipping sauce. The yellowtail jalapeno was sliced perfectly and dressed delicately with yuzu soy. The other all star was the bincho truffle with miso, chives and yuzu dressing. Each piece has a generous amount of truffle on top for a satisfying bite (and we each got two pieces) The cocktails are worth mentioning. My sisters enjoyed the gardener with gin, serrano pepper, cilantro, ginger and lime. I personally loved the whiskey sour. I believe it has Japanese whiskey, something that made it pinkish in color and just a perfect blend. They have a huge list of sake, wine, champagne, etc. so you have plenty to choose from. We tried three of their salads and the mushroom was the best followed the spinach and hearts of palm. The Colorado lamb chops were well cooked with a choice of antichucho sauce (smoky and a bit spicy) or teriyaki (good but sweet). The Alaskan Black Cod Lettuce Cup was good but not a favorite. The Japanese eggplant was also good but the sauce used is very sweet. The nigiri and rolls were a nice way to end the meal with super fresh fish. This was my most expensive meal of the year and the best. To family, good food and Matsuhisa!

We ate at the bar with Stefan as our guide to everything on the menu and cocktail list. His guidance and input was spot on with nothing failing to meet his description. We had tempura king crab, shishito peppers, excellent shashimi, beef skewers, waygu beef and spicy garlic lobster. Wine list was equally impressive and the bar selection is outstanding. The energy in the restaurant is vibrant and everyone there is sure to have a great time!

The room is impressive, the staff was efficient and friendly. the food was delicious. The energy in the room was impressive. If you're looking for a quiet intimate night out with your partner this is not the place. If you are looking for a fun, noisy delicious sushi meal I highly recommend Matsuhisa. we will return next year when we visit the area again.

Wow! Wow! and Wow! An amazing dinning experience. We must have ordered ten (10) different platters. Everyone of them were perfect, delicious and they were super prompt. The ambiance was truly enjoyable and although the place was crowded it was not noisy. The rock shrimp is a must!

Came with couples, not much as far as decor or ambience… it was a bit too crowded. The food was generally amazing; specifically the blackened seabass… an all time memorable dish for me… and I am a chef. Don’t miss this if you can get a reservation.

I was quite disappointed with the quality of the fish. I ordered five different pairs of nigiris, one was a recommended special. Therefore I expected high quality and freshness, but what arrived was disappointing. The fish wasn’t fresh and it did not taste like high quality sushi I’ve had before. They did have a decent vegan selections which were way better than the nigiris. The dessert was okay.

Matsuhisa relies on its namesakes fame and this draws in the crowds.
The restaurant is quite beautiful situated inside the Solaris complex. From the dining room you have a magnificent view of the mountain.
Our dinner started with the jalapeño yellowtail and a bowl of edamame. The yellowtail was thinly sliced with each piece topped with a jalapeño round. The fish was very fresh and melted in the mouth. The edamame, served warm was dusted with maldon sea salt.
Next came a few tempura dishes - zucchini, sweet potato and Japanese eggplant. I found the tempura tasteless and a bit oily.
We followed that with a few pieces of sushi - hotate (scallop), amaebi (sweet shrimp) and a soft shell crab roll. The sushi was good but it certainly didn’t wow us. We had as good if not better in other Japanese restaurants. I guess we were expecting stellar food given the restaurant’s reputation.
All in all it was a pleasant meal and dining experience but I wouldn’t go out of my way to dine at another Nobu restaurant
Great Sushi
We had a group meal here while visiting Vail on business. We allowed the waiter to suggest menu items. We had a semi-private room and excellent service. Food was awesome. Highly recommended.

We visited this restaurant a couple of years ago and I am happy to say that it is still amazing! First, the service...very attentive staff, never a dirty dish left behind or an empty drink. Our server Jack was extremely knowledgeable on what to order and when. His recommendations were spot on and delicious. We had so many delicious dishes over the course of two hours. Some that stand out are the; cod lettuce cups, tempura king crab, scallop specialty, tempura avocado, and the many sushi rolls offered. You will not be disappointed with this dining experience!

I’ve been here a number of times but not for a couple of years, and tonight was spectacular — as always!
The room is wonderfully theatrical, the food is simply extraordinary, and the staff is just plain brilliant.
Beginning with Kirstie’s warm welcome, everyone on the floor is extraordinary. Very impressive service.
The menu is enormous and beautifully plated, and the flavors are vivid and exciting.

Disconnect between hype and reality
This was our first visit to what was supposed to be a delightful dinner of Japanese kind. At least this was our expectation. And the menu seem to proof the usual vast selection of food items with strong Japanese and Asian heritage. Difficult to make a decision ... but then the first items came ... and unfortunately have proven our expectations to be a little wrong. The Shishito papers were excellent. The following appetizer looked great ... but tasted rather lame or at least not as flavorful as you would expect. Some of them required some soy sauce to give it at least some flavor. It feels as if the hype around the ownership and the brand of Matsuhisa is not matched with the service and food delivered. Maybe they want to please everybody that walks in and maybe there are too many guests that enjoy this kind of food. But if you are into Asian and especially Japanese food, then you probably better stay away. Sorry to say.

We had reservations at the restaurant in Aspen but had to cancel due to the roads being blocked. Although we could not get a table here, we were able to get in right when they opened at 5 and sat at the bar. Bobby, the bartender was great. Makes interesting drinks and knows the menu. It was perfect.

Excellent Japanese Peruvian fare. Nobu got it right once again. $$$$. Make reservations. Vail Village, second level, right in center of the lawn. I’m gluten free and they easily accommodated. Start with the Gardener cocktail!
