Did you know about the secret room? I didn't until we went up for dessert and coffee.. Maude.. A Chef Curtis Stone restaurant is what you'd expect it to be. Quaint, quiet, proper and detailed. The menu at Maude is a tasting course of about 13 courses that includes a few courses of dessert, the most important meal of the day.From the outside, you wouldn't expect this restaurant to be a one star Michelin. Inside, the restaurant is narrow and only seats a handful of patrons. The tones of navy blue, white subway tile and dark wood rails and stiles and dim lighting give for a Londonesque romantic feeling. Each of the 13 courses are a bit tough to describe so I'll focus on a few of the memorable ones. Potato requeson caviar: Swirly type potato with a ricotta filling topped with caviar is the dream of anyone's who loves savory. Nopales, Jicama, Avocado: This dish took on the Xmas theme. Perfectly sliced diamond cut nopales, jicama and avocado swimming in aguachile. This dish should of been in a museum. Pescado zarandeado: Out of Bon Appetite. I don't recall the fish, but it was perfectly grilled and cut rectangular. The detail of the carrot, radish salsa is unreal. Abalone: Served with farm beans, clams and ham hock swimming in a creme broth. We saved our bread and butter course to dip the bread in this delicious broth. Duck: Perfectly prepared. Crispy skin exterior, tender duck meat. Seve with an apple like macerate side, mole, and huitlacoche (corn mushroom).Once we were finished with dinner, they escorted us out of the restaurant to the building next door, a random office building, and up the stairs to a random office, "secret room".Inside this room, was the dessert room with dessert chefs inside. This room is used to prepare and serve the dessert courses. This room is surrounded by bottles of wine, cozy chairs and tables and a piano. It's cold in this room, so on each seat, there's a blanket to use. We had 4 dessert courses here. The most memorable one was the Black Forest. Definitely different. It's a beet type gelato with creme fraiche, dill, stout Namelaka, ryle tuile. Don't ask because I don't know these ingredients but very unique. More savory and slightly sweet. Very different and memorable.The coffee here was good too. Sourced from Cafe Luxx in SM which i researched days later to find, their coffee is highly rated. Service here is what you'd expect at restaurant like this. Very attentive, accommodating, and understanding of the detail of each dish. If you can appreciate food as an art and detail with cutting skills, placement, and plating, and flavors, Maude is a must. A great experience.
