😒 3/5 - i really wanted to like this place, but it definitely fell

i really wanted to like this place, but it definitely fell short of my expectations. we came on a wednesday night which was unexpectedly busy. we had an outdoor reservation at 8pm but also came at 7:15pm just cause. we were quoted a 20-30 minute wait which was completely fine. around 7:45 we came inside to check in and see how the wait was going. THE WAITLIST: now, this particular interaction really rubbed me the wrong way. they had about 3 or 4 hostesses at the stand, the one that we checked in with around 7:45pm talked to my friends and i awfully. she at first i'm guessing, didn't hear us correctly when we checked in for an already existing name on the waitlist and basically barked at us that they are seating reservations and not even concerned about putting names on the waitlist. when we specified we were asking about our existing check in, she basically gave us an i don't know and said they're prioritizing reservations. the way she talked down to us was quite frankly unacceptable and made us uncomfortable, and at that point we should've left. we were questioning amongst ourselves what we did to deserve that, because from our recollection, we were quite polite when asking. if she said they had difficulty with their seating arrangements and did not have an accurate prediction at that time, that answer would've been more than sufficient to us, especially because all us has had past experiences in food service, but decided to treat us rudely instead. THE RESERVATION: later on, we decided to check in for our reservation. i specifically went to a different hostess (who was way nicer btw) to check in with our outdoor reservation. they said they didn't have a specification that it was outdoors, (which was odd) but i told her my party and i would be happy to have the first thing that opened up. about 30 minutes passed our reservation we had seen about 5-6 parties get seated, probably two of them check in after us. when i checked in again with another hostess, she said that she is just waiting for one of the outdoor tables to check out, which was odd bc i thought our reservation did specify that it was outdoors? i specified again that we were okay with literally anything that opened up, and we finally got seated indoors at 8:30, waiting about 75 minutes. just seemed a bit disorganized. DINING : we got 6 plates: the ceviche verde (sea bass), tuna ceviche, salmon tostada, camarones de mojo, the beef brisket, and the octopus. we also ended up with margaritas, dessert, and free consolation guacamole which was good, but after trying it, i would not pay for it personally. the shrimp was good and sea bass ceviche was good, no complaints on taste for those. the octopus and tostadas were one dimensional and both were missing some colorful acidity and the tortillas we got with the brisket was extremely dry. the server was good, quick and efficient and bussed our table quickly. i wished he coursed our meal out a bit better because we ran out of space at our table, but i didn't really mind much. POSITIVES: the dessert was great. we had the ice cream with the coffee chocolate and the margaritas were awesome. and the salsa, on point! i ended with three stars because my experience was so flip floppy. when one thing redeemed the experience a bit, another knocked things down a peg. i still debate whether or not enjoyed it, but the one thing i know for sure is that i won't be back. love jose andres though so i will probably still support him, just not here. ultimately, not worth the 250 dollar meal we spent.
