Where to begin? What a stunning experience.
We were treated so well from the moment we walked in the door. We were greeted and seated at a lovely table by the Window to Dam Square. We had some bubbles while we settled in and some incredible Amuse Bouches to get our palates awake and refreshed. We opted for the 6 course menu plus some oysters to start. Of Course we had to do the wine pairing which is always a great idea to see what direction they want to take you. It did not disappoint at all. We had the oysters prepared both ways (classic and Bougainville style) excellent. The kingfish was delicious, as was each dish, Scallop, Rutabaga, quail and venison... all the way through the delicious dessert. The wine pairings were great, instead of telling you what you were drinking at the beginning that would wait until you were already pairing the wine with each dish and then show you the wine. I really enjoyed that, it left you free to just experience the wine and food together without preconceived notions (it was also fun to try to guess the wines) the pourings were ample as was the food. We left at the end of the evening very happy, full but not over full and with a lovely wine sweet spot. I need to mention that the entire team, we had 5 maybe 6 folks waiting on us and they all were spot on. We highly recommend Bougainville and will certainly make it a stop on the next trip back to Amsterdam.

All 6 courses kept getting better as the meal went on. The 2nd course of the potato dish was my favorite dish of the whole meal, it was sweet salty and just melted in your mouth. Combined with the atmosphere with the low lights and the calming music, it enhanced the flavors of the food and the conversation our party had. The wait staff talked through every dish and was there to cater any need we had. This was a place I would go once a month.

Went to Bougainville for dinner to celebrate a birthday and had a wonderful experience. We were seated at the Chef's Table which was a real treat. Meeting Chef Golsteijn and interacting with him and his staff as each dish came out was truly terrific. Everyone was friendly and the service was impeccable. The dishes were creative and wonderfully prepared and presented. We had a seven-course meal (plus an extra dessert) and there wasn't a miss. Though we weren't seated there, the main dining room also looked very nice - elegant with a great ambiance. Highly recommend!

Wow! Just wow! Lets start with the service, The service here was literally the best service I have ever had in my entire life, the servers were so in sync with each other, extremely friendly and helpful. You can tell they enjoy their job and enjoy their customers. You couldn't even get up to use the restroom without one of them running to Open the door for you while the other folds your napkins. The mood for was fancy with a warm welcoming homey feeling. Reverts to them caring about us actually being there. Nice views and nice music. Not overally crowded or loud either 10/10 Finally the food. I maybe no professional chef but I'm hard to please when it comes to me saying wow that was amazing but just about every dish was absolutely incredible. The food melted in your mouth and had many different flavors throughout the bite. Each dish also had a different style and flavor If i make it back to Amsterdam and feel like doing a repeat Michelin star, this will definitely be the place I go to and will certainly be the place I brag about to my friends. I have been to a few Michelin stars now but this one takes 1st place

First ones to sit for that timeframe, it seems? Missus rates this a 4.3/5. Ordered a drink - la vie en rose. Sweet - nice taste - great for the early courses. Second drink was "Bee's knees" - tasted like "lemonade" - I thought it was more like a lemon drop, but it's still good! Four 'premeal appetizers' First was watermelon that was marinated Second was Thai green curry on a small seaweed cracker Third was a caviar spoon Fourth one was basmati rice foam with coconut and split peas, matcha on top. Really interesting! This finished around 745pm - looks like we'll be here for a bit! (guessing 2.5-3 hours) Tasting Menu notes below (listed in menu order - Also actual served order) Course 1: Wild Seabass Two types - kibbelling (fried) and ceviche (running beans, jalapeño) Missus liked both. I liked the temperature of the kibbelling - perfect - very well made. The ceviche reminded me of a tender red snapper - the extra flavours really jump out at you. Course 2: Zucchini Flower Green sauce is spring onion; brown is miso Fennel, garlic, zucchini, bell pepper Temperature was the same as the body - not cold! Missus said that if this were a family-style big dish she'd eat it all. Course 3: Lobster Macadamia nut and water chestnut for crunchiness (bottom); crescent beets, Harissa for spice, brown butter on the bottom Missus really likes lobster: "Dutch really know how to cook seafood" I asked the staff how it was made - the lobster is fresh (killed at 5pm) - probably contributes most to the "freshness" of the dish. Course 4: Veal Veal covered in flour and crispy short rib; Emulsion with balsamic vinegar. Veal with Baba ghanoush, roasted eggplant, and some kind of reduction (sauce). Tasted Mediterranean, kind of? Missus thought this was ok, but a bit salty for her taste. Course 5: Dutch Lamb - theme is Turkey - hummus, Lebanese bread, back of the neck of the lamb. Chanterelle mushrooms Aged 10 days - smell mostly gone Missus (usually not ok with lamb) thought texture was great, didn't have lamb flavour - which she personally liked. Some of the dishes has the same cranberry sauce used in many places. Course 6: Strawberry & Sakura Strawberries - frozen and dried. Missus thought it was refreshing, liked the chocolate underlayer, but it was ok. Didn't really understand the liquid / mixed ingredients. The sorbet on the top was neutral flavour - didn't add anything to the raw dish. Music background is ambient, but expansive (in terms of eras covered) - anything from Lionel Ritchie to Phil Collins, Simple Minds (don't you forget about me), Lee Fields (ladies) Interesting serving technique - usually two people bring you the food (not always same two) - and one stays behind to explain (the other smoothly walks away) I noticed that others getting the wine pairing. The cups weren't as full as others, but you could tell the difference between the red wine pairings and white wine pairings. Random time check: 907pm (2 hours in) - still not at the last of the "mains" - so probably here for 3-3.5 hours, given how slow the food is. 931pm - lamb is done, but still waiting for course 6 (dessert). Somewhat disappointing how spaced out the dishes are. The other tables had staggered start times, so nobody started later than 830pm, but it felt like there was only one seating.

We went there this summer and had an absolutely exquisite dining experience. I have eaten at some 3 star Michelin restaurants which weren't nearly as good. From the moment we arrived, to the moment we left, the service, the food and the wine were extraordinary. Bravo!!

After doing significant research on Michelin-starred restaurants in Amsterdam, we settled on going to Restaurant Bougainville as it looked like much better value than the Michelin two star restaurants we researched. Also didn't hurt that TripAdvisor rated it the #1 restaurant in the entire city! The food here is extremely creative and well-made, with extreme levels of attention to detail. You can tell how much thought goes into every dish. My favorite dish from both a presentation standpoint and tastiness standpoint was the lobster. Other hits for me were the codfish, plaice fillet, and duck. Service was amazing, as to be expected from a MIchelin one star restaurant. Our server, Lendl, took great care of us. Each dish came accompanied with a lengthy explanation of what was in it. Restaurant Bougainville certainly provides the complete full service dining experience. An amazing meal for a relatively affordable price. If I had something similar to this back home in the U.S., I would most certainly be paying over $200/pp. Definitely worth trying again!

It was a fun, creative and delicious dishes. There were some familiar items but others that I wasn't expecting. The restaurant was able to accommodate my wife's food choices and exceptions. We were very grateful for that. The restaurant also offers an expansive cocktails and drinks menu. Their mixologist is quite creative and had some fun combinations. Miguel, our guide for the dining, couldn't have been sweeter. He truly made the experience magical. The kitchen staff blew us away. Bravo!

When you enter the restaurant you kind of get an eyes wide shut feel and the ambiance is awesome. The wine pairings are excellent and the food is even better. The service is great (it's like team service). I highly recommend this spot.
