There are high expectations when one walks through that unmarked door, but rest assured because every dish is executed very well. Started off with a milk bread, toro, caviar, and uni appetizer. Then came toro that was very soft and just melted in one's mouth. It was a good indicator of the quality of the nigiri that would be coming. The Hokkaido uni was one of the best I've ever had from that region. I also enjoyed the Japanese sea perch which I believe the chef referred to as akamutsu, though I've heard it called nodoguro at other places. Spanish mackerel was good, and even the horse mackerel (which I'm not usually that big of a fan of) was okay here. Scallop, soft shrimp, hirame, amberjack and others were all great. Some pieces are blow torched, some have little dollops of sauce added on top (yuzu pepper, for example). The meal ended with a soy ice cream that we all liked. No apple pie though.Our server Lua was very nice and knowledgeable. We appreciated her suggesting to us to not order the add-ons right at the beginning, but to wait a little bit to determine if we'll need them. It turned out that we were quite full with the standard set, and did not need the add-ons. We did order some Pappy Van Winkle 10-year and 12-year bourbons to finish off the meal. The restaurant carries a nice array of Japanese whiskies, American bourbons (I saw a lot of Michter's), and sakes. They called me to confirm my reservation twice - once on the day before (which I called back and spoke to someone) and then again on the day of (which when i called back got no response). This is confusing, as it made me wonder if my first confirm never went through. It made me question how effectively the service staff were communicating with each other. We were not able to get a corner section of the bar (which would've been nice as we were a party of three), but that's fine, others booked it first. Aside from those two minor things, everything else was terrific.I thought Shuko was as good as Ginza Onodera is food-wise, though the latter has a more impressive interior and higher price tag. This is a more intimate setting, similar to that of Kura.
