Very good and exciting food but dissapointing pricy drinks
We‘ve been there to have the tree Menue and enjoyed the food really much. We chose the non alcoholic option for drinks and had some water. Unfortunately almost all of the drinks were disappointing and very pricey as well as we‘ve got just about 2dl for 3 persons which ended in everyone just having a tiny sip. In addition to that the water costs 10.50 CHF / Liter which is shocking. In the end we payed about 240 CHF for drinks like literally a few pieces of pear with hot water and so on……
The situation with the drinks left us kinda disappointed and in the end we even had to ask for our last course because the service forgot it…..

for a long time we read a lot about stefan wiesner and his philosophy but unfortunately never visited him before. finally we spent a fantastic evening in escholzmatt, a small village in the beautiful entlebuch. the restaurant building offers you the regions typical charme. service is very friendly and attentive. regarding the food we were just amazed how stefan prepared and combined all kinds of local produce and parts of nature that most people would not believe to be edible at all (e.a. grounded stones, wood). although stefan is one of the early explorers in this field many years before nordic or peruvian cuisine became famous his star is still very underrated. every single dish is fantastic and (in contrary to some other worldfamous restaurants with "new cuisine") very tasteful, too. stefan explains his philosophy and his ideas with an incredible fire. his knowledge regarding natures products, art and life itself seems to be endless.
everyone interested in great foodexperiences not following the typical trends has to travel to escholzmatt. you will love it, too!

The service was friendly. The restaurant was average. The food looked promising on the menu. I ordered the fish menu. The salad was interesting adorned with lots of flowers. Hard to eat as there was very little or no salad sauce that I could taste. My next plate should have been cheese, but I was served a poached egg floating in water, again with the usual bunch of flowers on top. Not very appetizing. The waitress mixed up the menu. I did eventually get my cheese which tasted like a cream cheese again with flowers on top. My main was trout on top of mashed potato served in a tree trunk Not attractive or particularly tasty. The desert which again was not on my menu was a lemon tasting greek style jogurt. When I pointed this out to the waitress she seemed skeptical, as though I was not telling the truth. I asked her to speak to my original waitress who, I was told, had gone home. Most shocking for me was my husbands main dish which consisted of half a cauliflower with a non descript sauce. The top had been browned with a flame torch. It was not properly cooked and was stringy. I was also surprised to see the Chef walking around the restaurant most of the evening, so I wonder who was actually cooking. I could not recommend this restaurant.

The ones who have not been there and love really innovative cuisine need to meet the "Hexer", Stefan Wiesner and his team. High-end dining with natural ingredients like coal, stones, crystal - if you don't believe it, try it!
